Who doesn’t love Chicken Parmesan? Fried chicken smothered in cheese, served with pasta and tomato sauce—it’s a delicious indulgence that’s also a nutritional nightmare. When Chef Laura was tasked with making over a family’s Chicken Parmesan recipe, she knew she could make a mouthwatering alternative with a few easy changes. Two simple substitutions—using whole wheat versions of bread crumbs and pasta—increase the fiber, and soaking lean turkey sausage in red wine before adding it to the tomato sauce creates rich layers of flavor without a lot of added fat. All in all, her rehabbed recipe reduced the amount of calories by more than half and cut the fat by 80 percent.
